Asparagus is the herald of spring. Its tender stalks poke up from the ground during the first warm and wet days of the season. More Kentucky producers than ever are growing asparagus. It is a member of the Lily family and its origin is traced back to Eurasia.
In Kentucky, asparagus is in season from April through May. It is a good source of vitamin A and folate. One pound of asparagus yields four, one-half cup servings. A serving contains around 22 calories, 2 grams of protein, and 4 grams of carbohydrate.
